Turkey Meatballs with Hidden Courgette

Shredded courgette mixed into lean turkey meatballs. The courgette makes them juicier, not veggie-tasting. Serve over spaghetti.
Ingredients
- • 2 lbs 93/7 ground turkey
- • 1.5 cups shredded zucchini
- • 1 tablespoon olive oil
- • 1 tablespoon Italian seasoning
- • 1 teaspoon garlic powder
- • 1 teaspoon onion powder
- • 1/2 teaspoon chili powder
- • 1/2 teaspoon kosher salt
- • 1/4 teaspoon ground black pepper
Instructions
- 1 Shred the zucchini using a box grater. Place the shredded zucchini onto a clean towel and squeeze out any extra moisture. Discard the liquid.
- 2 Add the zucchini, ground turkey, olive oil, Italian seasoning, garlic powder, onion powder, chili powder, salt, and pepper to a large bowl. Mix with your hands or a fork to combine.
- 3 Use your hands or a small ice cream scoop to roll the mixture into about 20 even-size meatballs.
- 4 Preheat the air fryer to 390°F. Add a parchment paper liner to the air fryer basket and spray with cooking spray. Place half of the meatballs into the basket in an even layer, about 1 inch apart. Cook for 9-11 minutes until golden and the internal temperature reaches 165°F. Repeat with remaining meatballs.
- 5 Serve warm with pasta or topped with zesty tomato sauce.
