Fish Sticks

Homemade from mild cod or tilapia, or cook frozen ones. Stick shape is dip-ready. Serve with chips for fish and chips night.

Ingredients

  • 1 pound (450 grams) fish fillets (patted dry and salted)
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt (divided)
  • 0.5 teaspoon ground black pepper (divided)
  • 2 eggs
  • 1 cup (50 grams) dried breadcrumbs
  • tartar sauce
  • lemon wedges

Instructions

  1. 1 Season the fish with salt and let it sit for at least 20-30 minutes. This helps extract moisture and makes it firmer for crispy fish sticks.
  2. 2 Season the flour with salt and pepper, and do the same with the breadcrumbs. Add other seasonings such as garlic powder, onion powder, or smoked paprika if desired.
  3. 3 Dredge the fish in flour and shake off any excess. Then dip in egg, and coat with breadcrumbs.
  4. 4 Place the fish sticks in the air fryer basket without overlapping. Spray lightly with oil for extra crispiness then air fry at 400F (200C) for 10 minutes, flip, and cook for 5 more minutes.
  5. 5 Serve with a squeeze of fresh lemon juice and homemade tartar sauce.
