Loaded Potato Skins

Potato halves filled with cheese and bacon. Use frozen skins for zero prep.
Ingredients
- • 6 medium sized russet potatoes
- • 3 Tablespoons olive oil
- • salt, to taste
- • 1 cup shredded cheddar cheese
- • 3/4 cup bacon pieces
- • sour cream (for serving)
- • 1/4 cup green onions, thinly sliced
Instructions
- 1 Pre-heat air fryer to 400F. Rinse and scrub the russet potatoes well and dry thoroughly.
- 2 Place potatoes in air fryer basket, coat with olive oil, and sprinkle salt to taste. Turn potatoes and repeat.
- 3 Air fry for 20 minutes. Turn potatoes over and air fry for another 15 minutes.
- 4 Remove potatoes and transfer to a wire rack to begin cooling.
- 5 Once potatoes have slightly cooled, slice them in half lengthwise.
- 6 Using a spoon, scoop out some of the inside, leaving about 1/4 inch thick potato skins.
- 7 Sprinkle shredded cheddar cheese and bacon pieces evenly over all of the potato skins.
- 8 Return half of the skins to the air fryer basket and air fry for 5 minutes at 400F. Repeat with the remaining half.
- 9 Remove potato skins and let cool slightly.
- 10 Top with sour cream and sliced green onions. Enjoy!
