Ground Chicken Nuggets

Serves 4 servings

Made with ground chicken mixed with a panade (bread soaked in milk), shaped with a cookie scoop, breaded in panko. Extra moist and tender.

Ingredients

  • 500 g Chicken breast (cut into bitesize pieces)
  • 1 Egg (whisked)
  • 50 g Plain flour
  • 1 pinch Sea salt and ground black pepper
  • 150 g Golden breadcrumbs
  • 50 g Parmesan (finely grated)

Instructions

  1. 1 Cut 500 g Chicken breast into chunks.
  2. 2 In a bowl, combine 50 g Plain flour and 1 pinch Sea salt and ground black pepper.
  3. 3 In another bowl, combine 150 g Golden breadcrumbs and 50 g Parmesan.
  4. 4 Coat each piece of chicken in flour, then dip into 1 Egg (whisked) and then coat in the breadcrumb/Parmesan mixture.
  5. 5 Place the nuggets into the air fryer in a single layer, leaving space between them.
  6. 6 Cook on the Air Fry setting at 200°C/400°F for 8-10 minutes, turning halfway through.
