Sweet Potato & Carrot Bites

Sweet potato, carrot, oat flour, and Greek yoghurt shaped into soft bites. Ideal texture for the 2-year-old.
Ingredients
- • 180 g (3/4 cup) mashed sweet potato
- • 180 g (3/4 cup) mashed carrot
- • 1 tsp finely chopped rosemary
- • 1 egg
- • 3 tbsp Greek yogurt
- • 1 tsp garlic granules
- • 90 g (1/2 cup) oat flour (plus extra for dusting)
- • 3 tbsp olive oil
Instructions
- 1 Add all of the ingredients to a large mixing bowl and stir well until fully combined.
- 2 Sprinkle a little extra oat flour on a plate, then divide the mixture using a tablespoon. This helps them to not stick.
- 3 Place into the air fryer and cook for 12 minutes at 180°C (360°F) until golden and cooked through.
- 4 Serve with a sauce of your choice and a little sprinkle of fresh parsley.
