Frozen phyllo triangles with spinach and feta. The cheese masks the spinach flavour effectively.
Ingredients
- • 10 ounces fresh raw baby spinach
- • 2 tablespoons water
- • 1/4 cup whole fat ricotta cheese
- • 1/4 cup feta cheese, crumbled
- • 2 tablespoons parmesan cheese, grated
- • 1 large egg white
- • 1 teaspoon dried oregano
- • 1 teaspoon lemon zest
- • 1/4 teaspoon salt
- • 1/4 teaspoon black pepper
- • 1/8 teaspoon cayenne pepper
- • 1 package frozen phyllo shells
- • 1 tablespoon olive oil
Instructions
- 1 In a large saucepan, combine spinach and water. Cook until spinach is wilted, stirring often, about five minutes.
- 2 Drain and cool for at least ten minutes, pressing spinach into a paper towel to blot moisture.
- 3 Preheat the air fryer to 375F and spray basket with vegetable cooking spray.
- 4 In a large bowl, combine ricotta, feta, parmesan, egg white, oregano, lemon zest, salt, black pepper, and cayenne.
- 5 Add spinach and mix well.
- 6 Spoon the spinach mixture into each of the phyllo shells until all have been filled.
- 7 Add the filled phyllo shells into the air fryer and air fry for about 10-12 minutes until they are golden brown.
- 8 Plate, serve, and enjoy!
