Spanakopita Bites

Frozen phyllo triangles with spinach and feta. The cheese masks the spinach flavour effectively.

Ingredients

  • 10 ounces fresh raw baby spinach
  • 2 tablespoons water
  • 1/4 cup whole fat ricotta cheese
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons parmesan cheese, grated
  • 1 large egg white
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 package frozen phyllo shells
  • 1 tablespoon olive oil

Instructions

  1. 1 In a large saucepan, combine spinach and water. Cook until spinach is wilted, stirring often, about five minutes.
  2. 2 Drain and cool for at least ten minutes, pressing spinach into a paper towel to blot moisture.
  3. 3 Preheat the air fryer to 375F and spray basket with vegetable cooking spray.
  4. 4 In a large bowl, combine ricotta, feta, parmesan, egg white, oregano, lemon zest, salt, black pepper, and cayenne.
  5. 5 Add spinach and mix well.
  6. 6 Spoon the spinach mixture into each of the phyllo shells until all have been filled.
  7. 7 Add the filled phyllo shells into the air fryer and air fry for about 10-12 minutes until they are golden brown.
  8. 8 Plate, serve, and enjoy!
